A Town Called “Hope” (pt. 2)

After I had my keys in hand, I went to the diner that practically shared a parking lot with the gas station I’d been stuck in (I had kind of been staring at it for quite a decent chunk of time at this point.)

It was called “Rolly’s Pancake House Restaurant” and came highly recommended by the gas station attendant.

It was *delicious*.

Whenever I’m confronted with an item on a menu at a restaurant that I have never seen before, I will most likely indulge in that item. It just so happened that Rolly’s had a dish called a “Yorkshire Rarebit”, which is pretty much every breakfast thing I’ve ever wanted all combined onto one plate.

Eggs on English muffins, with bacon and hash browns. Then, the entire thing is covered in this seriously delicious cheddar cheese sauce.

Seriously. So. Good.

Breakfast Perfection was achieved. OM NOM NOM.
